Chewy cheese pie

Ingredients

FRESH MILK

Mandrekas fresh cow milk is 100% Greek and we collect it daily from select producers.

  • a pack (450g) of filo pastry
  • 800gr mixed yellow melting cheeses (gouda, emmental, gruyere, cheddar), grated
  • ½ l fresh milk
  • 200gr yogurt
  • 1 can (330ml) soda pop
  • 5 eggs
  • 2 tablespoons baked bread crumbs
  • freshly ground pepper
  • ½ teacup of extra virgin olive oil

Steps

  • 1. Grease with butter or oil a baking pan and sprinkle with the baked bread crumbs.
  • 2. Line the bottom and sides with 3 filo sheets placing one on top of the other.
  • 3. Break all but 2 of the remaining filo sheets into pieces with your hands. Combine these pieces with the cheeses in a bowl. Add plenty of freshly ground pepper.
  • 4. Empty the lot into the baking pan and smooth it over.
  • 5. Cover with the last 2 filo sheets. Fold the edges of pastry hanging over the sides back over the pie.
  • 6. Use a sharp knife to score the pie into pieces. Pour the olive oil over the scoring lines. Whisk the eggs, yogurt, milk and soda pop together in a bowl and pour the mixture over the pie. Leave for 15 minutes until the pie absorbs the mixture.
  • 7. Preheat the oven to air 220ºC. Place the baking pan on the centre shelf of the oven, reduce temperature to 170ºC and bake for 1h until the pie rises and becomes golden and crispy.
